Jalapeno Peach Chicken Wings

Today is National Chicken Wing day so for one of my recipes of the day (I have three going up) I am posting my recipe for Jalapeno Peach Chicken Wings.
It combines the sweet and spicy I sometimes like to have in my wings if I am not doing the usual Buffalo hot, or the Hot BBQ wings I so often love to order out. Occasionally when I get a plate of some super atomic spicy sauce, I like something still spicy, but also sweet as a counterpoint as it tends to clear the palate if you switch hit wing types and want the flavors to really stand out.
I am posting along with some blogging peers, as there are so many ways to do wings, I am certain you want to browse as many as you can, and save them all for later. Imagine having a wing party with all these different kinds of wings!
As party foods go, wings have always been my most well received and I don’t think I can ever make enough to last.

Jalapeno Peach Chicken Wings
Ingredients
- 4 pounds chicken wings rinsed, dried, seasoned with salt and black pepper.
- 1 tablespoon oil
- 1/4 cup minced fresh onion
- 1 fresh jalapeno seeded and minced
- 1 tablespoon minced fresh garlic
- 1 teaspoon fresh ginger paste
- 1 cup peach preserves
- 1/4 cup apple cider vinegar
- 1/4 teaspoon soy sauce
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 teaspoons Louisiana pepper sauce
- 1/4 teaspoon ground cayenne pepper optional
- 1 green onion thinly sliced (optional garnish)
Instructions
- Saute the onion, jalapeno and garlic until the onion becomes translucent.
- Stir in the ginger, peach preserves, vinegar, soy sauce, salt and black pepper, Louisiana pepper sauce, and cayenne (if you like it spicier).
- Heat oil several inches deep in a large deep skillet (amount will depend on skillet size).
- Season chicken wings to taste with salt and black pepper, and fry in 350F oil for 8-10 minutes or until cooked to 170F.
- Drain on paper toweling and then toss wings with sauce to coat.
I always like to mix some sweet in with my heat. These sound perfect.
