Chicken and Black Bean Vegetable Soup is my recipe of the day for the blogging event National Soup Swap day.
This is separate from my usual soup swap group which posts one Saturday per month. I am posting for that one today as well. So it’s a double your pleasure thing if you are looking for new soup recipes.
Today’s soup is a combination of a vegetable and southwest chicken and black bean soup. It has some in common with a tortilla soup but different.
I made the soup this way to up the amount of vegetables and I was dodging having the carbs associated with adding tortilla strips.
If you like this soup spicy, feel free to add a little hot sauce such as Louisiana or Tabasco. Salsa is a good addition as well, depending what you have on hand.
This soup is good for me when I am counting calories. Increasing both my soup and water intake is one of the ways I like to do dieting. It keeps me feeling full so it doesn’t upend my metabolism as much as very restrictive portions.

Chicken and Black Bean Vegetable Soup
Ingredients
- 3 cups chopped cooked chicken
- 3 cups chicken broth
- 15 ounce can mixed vegetables
- 15 ounce can black beans
- 2 tablespoons tomato paste
- 1/2 teaspoon black pepper
- 1 teaspoon ground cumin
- 1/2 teaspoon dried oregano
- hot sauce to taste
- 1 tablespoon chopped cilantro (garnish)
Instructions
- Place ingredients in saucepan, and bring to a boil; continue to simmer on low for 15 minutes.
- Garnish with cilantro.
