Ingredients
  

Spicy Pimiento Dressing: (makes 1-1/2 cups dressing)

  • 4 ounce jar diced pimientos
  • 1 cup olive oil
  • 3 tablespoons fresh lemon juice
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 teaspoons granulated sugar
  • 1 teaspoon ground cumin

Spiced Couscous:

  • 1 cup water
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon ground aleppo pepper
  • 1/2 teaspoon salt
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon powdered chicken bouillon
  • 1 tablespoon olive oil
  • 1 cup dry couscous

Salad Ingredients:

  • 2 cups cooked red quinoa start with 1/2 cup dry
  • 1/4 cup golden raisins
  • 1/4 cup dried currants
  • 2 tablespoons chopped Italian parsley
  • 3 scallions finely chopped
  • 1/4 cup finely grated carrots
  • 4 cups arugula
  • 3 pounds cooked rotisserie chicken deboned

Instructions
 

Spicy Pimiento Dressing:

  • Place ingredients for dressing in a blender and puree until smooth.

Spiced Couscous:

  • Bring water and seasonings to boil.
  • Add dry couscous and stir.
  • Remove from heat and let stand covered for 5 minutes off the heat.
  • Cook red quinoa according to package directions and cool.
  • Stir couscous, red quinoa, raisins, currants, parsley, scallions and carrots together.
  • Slice chicken and set aside.
  • Place arugula in bowls or on a plate and top with desired amount of salad grains, chicken, and dressing.
