Spiced Couscous:

smoked paprika

teaspoon
powdered chicken bouillon

olive oil

dry couscous
Salad Ingredients:

cooked red quinoa
start with 1/2 cup dry
1/4
cup
golden raisins
1/4
cup
dried currants

tablespoons
chopped Italian parsley

scallions
finely chopped

finely grated carrots

arugula

cooked rotisserie chicken
deboned
Instructions
Spicy Pimiento Dressing:
Place ingredients for dressing in a blender and puree until smooth.
Spiced Couscous:
Bring water and seasonings to boil.
Add dry couscous and stir.
Remove from heat and let stand covered for 5 minutes off the heat.
Cook red quinoa according to package directions and cool.
Stir couscous, red quinoa, raisins, currants, parsley, scallions and carrots together.
Slice chicken and set aside.
Place arugula in bowls or on a plate and top with desired amount of salad grains, chicken, and dressing.
