Lemon Chicken and Arugula Salad is my recipe of the day with the blogging group Sunday Funday. We get together on Sundays to share our favorite recipes on a given topic. This week we are offering delicious recipes using couscous.

My recipe stems from a visit to a Trader Joe’s grocery store, which is across town from where I am. So I don’t get there often.
I was going to be needing something to eat not long after my visit, so when I saw this salad, I grabbed one. I liked it a lot and wish I had gotten two.
But it’s not too difficult to figure out how to make one. I did notice mine had the small couscous and before they had made these with the larger Israeli couscous. I made my copy on what I had tried. However, I imagine you can use either. Just refer to package directions on the couscous because they cook differently.
I had some extra dressing left which is nice on other salads. I also think the couscous/quinoa mix makes for a great grain salad in itself. You could stir chopped chicken in, or leave it out. I think I would also like this with cooked turkey.

Lemon Chicken and Arugula Salad
Ingredients
Spicy Pimiento Dressing: (makes 1-1/2 cups dressing)
- 4 ounce jar diced pimientos
- 1 cup olive oil
- 3 tablespoons fresh lemon juice
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 teaspoons granulated sugar
- 1 teaspoon ground cumin
Spiced Couscous:
- 1 cup water
- 1/2 teaspoon turmeric
- 1/2 teaspoon ground aleppo pepper
- 1/2 teaspoon salt
- 1 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon powdered chicken bouillon
- 1 tablespoon olive oil
- 1 cup dry couscous
Salad Ingredients:
- 2 cups cooked red quinoa start with 1/2 cup dry
- 1/4 cup golden raisins
- 1/4 cup dried currants
- 2 tablespoons chopped Italian parsley
- 3 scallions finely chopped
- 1/4 cup finely grated carrots
- 4 cups arugula
- 3 pounds cooked rotisserie chicken deboned
Instructions
Spicy Pimiento Dressing:
- Place ingredients for dressing in a blender and puree until smooth.
Spiced Couscous:
- Bring water and seasonings to boil.
- Add dry couscous and stir.
- Remove from heat and let stand covered for 5 minutes off the heat.
- Cook red quinoa according to package directions and cool.
- Stir couscous, red quinoa, raisins, currants, parsley, scallions and carrots together.
- Slice chicken and set aside.
- Place arugula in bowls or on a plate and top with desired amount of salad grains, chicken, and dressing.
