Ingredients
  

  • 10.10 ounces Mini M&M's candies 1-1/2 cups
  • 1 cup unsalted butter at room temp
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon coffee extract
  • 1 teaspoon vanilla
  • 1-3/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup cookie sprinkles

Instructions
 

  • Preheat oven to 350F.
  • Cream butter with sugars until smooth.
  • Add egg and extracts and blend again,
  • Mix in flour, baking soda and salt until a dough forms, then stir in one cups of the M&Ms, saving the last half cup for the tops.
  • Use a one tablespoon cookie scoop to drop dough onto a parchment paper lined cookie sheet.
  • Bake cookies five minutes to allow them to spread, then sprinkle with cookie decor and remaining candies.
  • Continue baking another 5-7 minutes until edges are golden brown.
  • Cool on pan 5-10 minutes before sliding the parchment onto a cookie rack to finish cooling.
