Ingredients
  

Salad

  • 18 ounces roasted beets
  • 3 ounces shaved red onions
  • 10 ounces black seedless grapes halved
  • 1/2 cup crumbled feta cheese
  • 1/4 cup shredded fresh mint leaves

Orange Dressing:

  • 1/2 cup orange juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon granulated sugar
  • 1/4 cup extra virgin olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions
 

  • Mix dressing and pour over beets, onions and grapes.
  • Chill for one hour.
  • Serve salad on small plates garnished with feta and mint.
