Roasted Beet Salad with feta and grapes is my recipe of the day. It’s inspired by a recipe by Anthony Bourdain which uses slices of fresh orange.

My beets were red (purple) and I wasn’t interested in staining my oranges. So I switched out for seedless grapes and used an orange vinaigrette to cover that aspect.
Topped with a touch of salty feta to counter the sweetness of a citrus dressing, it makes for a very simple salad. You could add some baby lettuce underneath if you like. I enjoyed it as is.
Roasted Beet Salad
I used prepackaged roasted beets from the produce section in this. But feel free to roast your own from raw. Or open a can of beets and take what you need.
If you do get them fresh and raw, be sure to use the green tops very soon. I have a recipe below that shows how you can use those without wasting them.

Roasted Beet Salad
Ingredients
Salad
- 18 ounces roasted beets
- 3 ounces shaved red onions
- 10 ounces black seedless grapes halved
- 1/2 cup crumbled feta cheese
- 1/4 cup shredded fresh mint leaves
Orange Dressing:
- 1/2 cup orange juice
- 1 teaspoon Dijon mustard
- 1 teaspoon granulated sugar
- 1/4 cup extra virgin olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Mix dressing and pour over beets, onions and grapes.
- Chill for one hour.
- Serve salad on small plates garnished with feta and mint.
