Pumpkin Spice White Russian Cocktail is my recipe of the day which had been planned for Sunday Funday but I missed my publishing deadline. For other recipes in the event, check the links below.
You might be familiar with the regular white Russian cocktail which has vodka, Kahlua & cream. This drink adds an autumn twist by mixing in the flavors of a pumpkin spice latte which switches out for the Kahlua.
I’ve added a touch of maple plus a gingersnap glass rim that easily puts it over the top. I could drink these until I slid off my chair so watch out!

Pumpkin Spice White Russian Cocktail
Ingredients
- 6 ounces pumpkin pie flavored vodka
- 14 ounce bottle Starbuck's Pumpkin Spice Latte
- 4 ounces heavy cream
- 2 windmill spice or gingersnap cookies finely crushed
- 2 tablespoons maple syrup
- 1/4 cup whipped cream
Instructions
- Wet rims of highball glasses with maple syrup and dip glasses into fine crumbs.
- Shake vodka, latte mixture and cream with ice and pour into the four glasses adding additional ice as needed to top up.
- Top with whipped cream, sprinkling extra crumbs on whipped cream for a garnish.
