Sausage, Potato and Sauerkraut Soup

Ingredients
  

  • 2 tablespoons olive oil
  • 1 cup diced carrots
  • 1 cup diced onion
  • 1 rib celery (diced)
  • 2 teaspoons minced garlic
  • 1-2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 16 ounces kielbasa smoked sausage (sliced)
  • 1 cup finely chopped sauerkraut
  • 4 cups chicken broth
  • 15 ounces can diced tomatoes (undrained)
  • 1 tablespoon sweet paprika
  • 1 pound diced Yukon gold potatoes
  • 2 tablespoons minced Italian parsley

Instructions
 

  • Heat olive oil and saute the carrots, onion, celery and garlic until onions soften.
  • Add bay leaves, thyme, salt, pepper, sausage, sauerkraut, chicken broth, diced tomatoes (with liquid) and paprika.
  • Bring soup to a boil, then reduce heat, cover and simmer for 20 minutes.
  • Stir in the potatoes and parsley, cover, and continue to simmer for twenty minutes more.
