kielbasa smoked sausage
(sliced)

finely chopped sauerkraut

chicken broth

ounces
can diced tomatoes
(undrained)

sweet paprika

diced Yukon gold potatoes

tablespoons
minced Italian parsley
Instructions
Heat olive oil and saute the carrots, onion, celery and garlic until onions soften.
Add bay leaves, thyme, salt, pepper, sausage, sauerkraut, chicken broth, diced tomatoes (with liquid) and paprika.
Bring soup to a boil, then reduce heat, cover and simmer for 20 minutes.
Stir in the potatoes and parsley, cover, and continue to simmer for twenty minutes more.
