Ingredients
Salad:

shaved celery

apple
cored and chopped

coarsely chopped toasted walnuts

dried sweetened cherries

minced fresh Italian parsley

crumbled blue cheese
Creamy Honey Dijon Vinaigrette:

tablespoons
honey

tablespoons
white wine vinegar

tablespoons
mayonnaise
2
teaspoons
Dijon mustard

extra virgin olive oil

teaspoon
each salt and black pepper
Instructions
Shave celery on a mandoline, using the shredding blade of a food processor, or thinly slice by hand.
Combine with other salad ingredients.
Whisk together the honey, vinegar, mayonnaise and mustard, then add oil in a steady stream, whisking constantly.
Stir in salt and black pepper to taste (about one teaspoon each).
Gently toss salad with dressing.
Serve immediately.
If chilling before serving, add the blue cheese and walnuts just prior to serving so they don't lose quality.
