Shaved celery and apple salad is my recipe of the day with the Foodie Extravaganza blogging group.
Each month we take turns hosting and the host picks out a food holiday to celebrate. This month Wendy Klik of A Day in the Life on the Farm chose National Celery Month.
Shaved Celery as an Option
I decided to try my hand at doing a shaved celery salad since one of the things that annoys me about celery is getting the strings stuck between my teeth. Shaving it will make it very thin and eliminate that problem.
From there, it came down to deciding what to put in my salad. I went with a couple of things I really enjoy with celery. The first is a chopped apple in a Waldorf salad, and the second is some blue cheese to go with the celery served alongside my beloved Buffalo chicken wings (I am gobsmacked about them).
It is not too difficult to pair all of that together- we know the celery fits right in, and blue cheese is always welcome with fruit and nuts.
Creamy Honey Dijon Vinaigrette
For a dressing I made a creamy honey Dijon vinaigrette which will keep it much lighter than the heavy mayo versions of Waldorf and the light sweetness of the honey really complements the blue cheese.
If you are a blue cheese hater I can’t really help you too much- you might put in some diced Gouda, which goes very well with apples. But don’t whine if it isn’t as over the top as the blue cheese is. It has a singular personality.

Shaved Celery and Apple Salad
Equipment
- Mandoline or Food Processor
Ingredients
Salad:
- 3 cups shaved celery
- 1/2 cup coarsely chopped toasted walnuts
- 1/3 cup dried sweetened cherries
- 1 tablespoon minced fresh Italian parsley
- 1/4 cup crumbled blue cheese
Creamy Honey Dijon Vinaigrette:
- 2 tablespoons honey
- 2 tablespoons white wine vinegar
- 2 tablespoons mayonnaise
- 2 teaspoons Dijon mustard
- 1/2 cup extra virgin olive oil
- 1 teaspoon each salt and black pepper
Instructions
- Shave celery on a mandoline, using the shredding blade of a food processor, or thinly slice by hand.
- Combine with other salad ingredients.
- Whisk together the honey, vinegar, mayonnaise and mustard, then add oil in a steady stream, whisking constantly.
- Stir in salt and black pepper to taste (about one teaspoon each).
- Gently toss salad with dressing.
- Serve immediately.
- If chilling before serving, add the blue cheese and walnuts just prior to serving so they don't lose quality.
This will be a perfect salad for those summer potlucks….I am ready and waiting!!
Is there a good substitution for the mayonnaise, for the allowance of safely not refrigerating during barbecue?
I would just leave it out- the dressing will be a little bit thinner, but still good.

Celery, apples and blue cheese are a match made in heaven! We are grilling steaks tonight (kitchen renov still not finished!) and I just happen to have all the ingredients for your lovely salad. Can’t wait!
