Brown sugar adds a tender chewy texture while  the vanilla extract brings out  flavor notes on  all levels.

The  scotchies have a wholesome goodness that is old-fashioned in nature. A perfect fall flavor, they can find their way into lunch  pails as a room  temp dessert or make a great after-school snack  with  a  glass of cold milk.

I used both caramel and  butterscotch chips to provide a complex flavor profile. And  the amount is perfect for this batch of cookies.  I  don’t like cookies with skimpy amounts of  chips. And I know already that  everyone loves these! So do give  them a try.

Equipment

  • parchment paper

Ingredients

  • 1 cup unsalted butter (at room temperature)
  • 1 cup Dixie Crystals light brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons Taylor and Colledge vanilla paste
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1-1/4 cups all-purpose flour
  • 3 cups old-fashioned oats
  • 11 ounces Nestle butterscotch morsels
  • 10 ounces Ghiradelli caramel chips or morsels

Instructions

  • Preheat oven to 375F.
  • Cream together the soft butter with both the brown and granulated sugars.
  • Add in eggs, one at a time, mixing until smooth, then stir in the vanilla paste.
  • In a separate bowl, sift together the baking soda, salt, cinnamon, and flour.
  • Gradually add to the creamed mixture, then stir in the oats, mixing well.
  • Fold in the flavored baking chips.
  • Using a tablespoon cookie scoop, drop dough onto parchment lined cookie sheets about a dozen per sheet.
  • Bake cookies for 10-12 minutes or until golden.
  • Cool on cookie sheets five minutes, then finish cooling on a wire rack.
  • Store cooled cookies in an airtight container.
