Oatmeal Peanut Butter Chip Cookies is my recipe of the day with the Foodie Extravaganza blogging group. We get together once per month to post on various topics, usually involving food holidays.
We are posting this month on peanut butter recipes. I already had one from a few months back which was this cookie recipe.
I love oatmeal cookies of any type, whether they have raisins, chocolate chips or in this case, peanut butter chips.
These are perfect to fill the autumn cookie jar before you get busy with Christmas and other holiday cookies.
We love cookies of all types, but these are more generic and not usually ones for the holiday tins. But even so, they will mix well around other cookies then for variety, just as chocolate chip cookies do.
These are also sturdy and ship well if you are planning to send out care packages to military and other distant family members.

Oatmeal Peanut Butter Chip Cookies
Ingredients
- 1/2 cup soft unsalted butter
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla
- 1 tablespoon maple syrup
- 3/4 cup all-purpose flour
- 1/4 teaspoon cinnamon
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup old-fashioned oats
- 1/2 cup chopped peanuts
- 1 cup peanut butter chips
Instructions
- Preheat oven to 350F.
- Cream together the butter and sugars.
- Mix in the egg, vanilla and maple.
- Gradually add other ingredients.
- Scoop out onto parchment with a cookie scoop, and bake one dozen per sheet.
- Bake 15 minutes.
- Cool on parchment.

Oatmeal cookies are a favorite as are peanut butter cookies. I never thought to put them together. You can bet I’ll be baking these soon. Stress baking is real…as is consolation pie, which I also baked last night as the election results were streaming on NPR. Ugh.
Yumm!! Love that these have PB and PB chips in them! I love baking with PB chips.
Me thinks these would be dangerous to have in my house. They look hard to resist.
I’m not a huge fan of oatmeal cookies with raisins but add chocolate and/or peanut butter chips? I’d be all over those!
Definitely a perfect cookie for the holiday season! I love all those autumn flavors.
