Meltaway Cookies is my recipe of the day for the annual blogging event Christmas Cookies Week. My blogging friends and I have been doing this one for a few years now. It’s always something I look forward  to. Especially since cookie baking is so much fun.

Note: This recipe was previously locked for troubleshooting. But it should work  fine for you now. Apologies to anyone who had trouble with the  old version.  For those looking for the  old version if it worked for you, sorry but  it is no longer available.

Earlier I shared my recipe for Mandarin Orange White Chocolate Chip Cookies and the white chocolate fun continued with Peanut Butter Brownie Bombs. Then Wednesday’s fun had us making the Easiest Sugar Sprinkle Cookies with your favorite jimmies or nonpareils.

Equipment

  • cookie sheet and parchment paper

Ingredients

Cookie Dough:

  • 1 cup unsalted butter (at room temperature)
  • 3/4 cup sifted powdered sugar
  • 1 teaspoon vanilla
  • 1 large egg
  • 1/2 cup cornstarch
  • 1 teaspoon salt
  • 1-1/4 cups cake flour

Other:

  • Sifted powdered sugar (as needed)

Instructions

  • Preheat oven to 350F.
  • Mix together cookie dough ingredients until smooth.
  • Use a one tablespoon scoop per cookie and place on a parchment paper lined cookie sheet.
  • Flatten with a glass spritzed with nonstick spray then dipped in cornstarch.
  • Bake for 12 minutes.
  • When cookies cool, dust with sifted powdered sugar.
