Turtle Chocolate Chip Cookies

One of my daughter’s favorite treats for the holidays has always been a bag of the little miniature chocolate turtles. I always tried to make sure it was part of her Christmas stocking treats. Now that she is grown up. I really don’t keep a lot of candy around during the holidays, but do like the flavors of chocolate and caramel. And when trying to think of a good choice to make chocolate cookies for the 12 Days of #ChristmasCookies event, this really did seem like a natural choice.
It is simply a variation on the double chocolate chip cookie, and is simple to make as well. This type of cookie is great for shipping and makes a ton if you need cookies for a party. And besides the holidays, this is good any time of year. If you can’t find the caramel bits year-round, chopping up wrapped caramels is also an option.

Turtle Chocolate Chip Cookies
Yield: 5 Dozen Cookies
Ingredients:
- 1 cup softened butter
- 3/4 cup granulated sugar
- 3/4 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon butter extract
- 1-3/4 cups all-purpose flour
- 1/2 cup unsweetened baking cocoa
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1 cup caramel bits/chips/chopped caramels
- 1 cup chocolate chips
- 1 cup toasted chopped pecans
- 60 pecan halves
Method:
- Preheat oven to 375°F.
- Cream butter and sugars in an electric mixer; add eggs one at a time, then extracts.
- When mixed, sift the flour, baking cocoa, salt and baking soda together and gradually add to dough mixture, mixing until smooth.
- Stir in the caramel bits, chocolate chips and chopped pecans.
- Drop by rounded tablespoonful or use a cookie scoop onto parchment paper lined cookie sheets.
- Bake 9-11 minutes, then slide parchment sheet onto a wire rack to cook the cookies completely.
