Peanut Butter Brownie Bombs is my recipe  of the day for the annual blogging event Christmas Cookies Week. My blogging friends and I have been doing this one for a few years now. It’s always something I look forward  to. Especially since cookie baking is so much fun.

Peanut Butter Brownie Bombs

Yesterday I  shared  my  recipe for Mandarin Orange  White Chocolate Chip Cookies and  the white chocolate fun continues today  with the brownie  bombs. I’ll  continue  to  post all  week long amid a flurry of recipes of all types so keep checking back.

The holidays are almost  here  and it’s a great time to scope  out those recipes you will be wanting to use. Whether they are  mine or  other bloggers or wherever you  like to browse. It’s an exciting time to  cook!

Check  out that white chocolate Reese’s thin sunk  inside the bar like buried treasure. The  peanut butter brownie is at once chewy delicious and then the chocolate hits. Oh. My. Yum. The brownies sunk ever so slightly from  the chocolate pool but it doesn’t detract  from the end flavor. And a drizzle of  frosting pretty much hides any flaw.   If you  even want to call it a flaw.

It’s a bomb fuse hole. LOL! And these bombs  disappeared in record time. You  should get lots of compliments.

Equipment

  • muffin tin

Ingredients
  

  • 3/4 cup cooled melted butter
  • 2 large eggs
  • 1 cup brown sugar
  • 1/2 cup creamy peanut butter
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 cups all-purpose flour
  • 20 white chocolate Reese's Thins candies
  • Wilton white cookie decorating icing

Instructions
 

  • Preheat oven to 350F.
  • Spray a large muffin pan (24 cavity) with nonstick spray.
  • Mix ingredients except icing and candies into a dough.
  • Place one tablespoon dough in each cavity and press down.
  • Add Reese's thin, then cover with another tablespoon dough, spreading to cover completely.
  • Bake for 16-18 minutes or until golden and done.
  • Cool in pan 15 minutes, then turn out and cool on a wire rack.
  • Decorate with cookie icing if desired, allowing icing to set up and harden for about 30 minutes.
