Macadamia Mint Meltaway Cookies is my recipe of the day for the annual blogging event Christmas Cookies Week. My blogging friends and I have been doing this one for a few years now. It’s always something I look forward to. Especially since cookie baking is so much fun.

Macadamia Mint Meltaway Cookies
Equipment
- 1 cookie sheet
- 1 roll parchment paper
Ingredients
- 4 ounces unsalted butter softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla
- 1-1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 cup mini mint meltaway candies
- 1/2 cup chopped macadamia nuts
- 1/4 cup pastel non-pariels or cookie sprinkles
Instructions
- Preheat oven to 350F.
- Cream butter and sugar until smooth.
- Then mix in the remaining ingredients except the sprinkles.
- Use a one tablespoon cookie scoop to measure dough.
- Roll dough into balls and then in sprinkles.
- Place on a parchment lined cookie sheet and flatten slightly.
- Bake for about 14 minutes.
- Cool on pan 5 minutes, then finish cooling on a wire rack.
