Equipment

  • 1 cookie sheet
  • 1 roll parchment paper

Ingredients
  

  • 4 ounces unsalted butter softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla
  • 1-1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 cup mini mint meltaway candies
  • 1/2 cup chopped macadamia nuts
  • 1/4 cup pastel non-pariels or cookie sprinkles

Instructions
 

  • Preheat oven to 350F.
  • Cream butter and sugar until smooth.
  • Then mix in the remaining ingredients except the sprinkles.
  • Use a one tablespoon cookie scoop to measure dough.
  • Roll dough into balls and then in sprinkles.
  • Place on a parchment lined cookie sheet and flatten slightly.
  • Bake for about 14 minutes.
  • Cool on pan 5 minutes, then finish cooling on a wire rack.
