Soft Homemade Dinner Rolls is my recipe of the day with the blogging group Bread Bakers. Each month we group together to bake new types of breads on a given theme.

This month our host has asked us to make dinner rolls. I have opted for a standard yeast roll that I have enriched with  extra butter, egg,  and dough  conditioner (in the  form of  powdered milk).

The  result is pillowy soft and  light rolls that you  can have on your table in  around two hours.

For proofing,  I use a Breville Smart Air oven set to 100F. Or warm a  microwave and  keep the dough in there with the oven  off.  I have also  used a heating pad under the bowl  before. But likely the ambient room temp just won’t cut it so think ahead.

Your yeast  likes to be nice and warm to do its best work.

Soft Homemade Dinner Rolls

Equipment

  • Electric Mixer

Ingredients

  • 1 cup warm water
  • 1 ounce package dry yeast
  • 3-1/2 cups all-purpose flour
  • 1/4 cup powdered dry milk
  • 1/4 cup granulated sugar
  • 1/2 tsp salt
  • 1/4 cup melted butter
  • 1 large egg

Instructions

  • Dissolve yeast in warm water in mixing bowl, allowing to stand until yeast dissolves.
  • Add flour, powdered milk, sugar, salt, melted butter and egg.
  • Beat with hook attachment for 4-5 minutes.
  • Scrape dough out using a spatula into a greased bowl.
  • Let rise in a warm place (100F) until doubled in size.
  • Preheat oven to 375F.
  • Punch down and make into 12 rolls and place in a greased 9x13-inch baking pan.
  • Let rise again in warm place for about 25-35 minutes as the oven preheats.
  • Bake for about 20-25 minutes or until golden brown.
  • Brush tops with one tablespoon melted butter while warm.
