Sage Stuffing Muffins

This month I am sharing sage stuffing  muffins, which use up a box of Stove Top stuffing mix that found its way into my pantry. I decided to get creative with it and add it into some muffins. And I am glad I did.

These make nice easy handheld versions of stuffing that can double as your dinner roll for a roasted chicken or turkey  dinner. So if you can’t decide between bread in the pan or bread in the hand, this will be perfect for you.

Equipment

  • muffin tins

Ingredients
  

  • 6 ounce box Stovetop Sage stuffing mix (2-1/2 cups seasoned stuffing mix)
  • 1 cup all-purpose flour
  • 1/4 cup corn meal
  • 4 teaspoons baking powder
  • 3 large eggs (lightly beaten)
  • 1 cup milk
  • 1/2 cup vegetable oil

Instructions
 

  • Preheat oven to 400F.
  • Grease a 14 cavity muffin tin and set aside.
  • Combine stuffing mix, flour, corn meal and baking powder in a bowl.
  • Whish together the eggs, milk and oil.
  • Add the egg mixture to the flour mix, stirring to combine.
  • Divide batter among the muffin tin cavities.
  • Bake for about 20 minutes or until cooked in the center.

  1. What a fabulous idea, Sue! We aren’t big on sage in my family (it’s popular in Texas but not so much in Louisiana where my cultural traditions originate) but I could certainly adapt it to recreate our favorite stuffing in muffin form. Bet it smelled like Thanksgiving in your house as they baked!
