For my recipe, I wanted to do some simple yet elegant asparagus. Often I will roast some asparagus with some garlic. But today I decided to do a gastrique. This is a sort of simple sweet and sour sauce made with citrus juice, sugar and a little vinegar. It is cooked until syrupy.

Poured over the asparagus spears, it is sort of like a sweet and sour citrus honey.  Think of it as a somewhat homemade agrodolce sauce, albeit the gastrique is French whereas the agrodolce is Italian. They are very similar. And also easy, elegant and delicious. I am sure you will enjoy.

Ingredients

  • 12 ounces fresh asparagus spears trimmed
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup granulated sugar
  • 1/4 cup tangerine juice freshly squeezed
  • 2 tablespoons rice wine vinegar

Instructions

  • Preheat oven to 400F.
  • Toss asparagus with oil and season with salt and pepper.
  • Place on a baking sheet and roast for 12-15 minutes.
  • While asparagus cooks, combine sugar, tangerine juice and vinegar in a small saucepan and bring to a boil, stirring constantly, until mixture thickens and coats the back of a spoon, about 5-10 minutes.
  • Drizzle mixture over asparagus.
