Grogu’s Frog Egg Dessert is my recipe of the day with the blogging group Sunday Funday. We post weekly on varying topics. This week we’re featuring April Fools recipes. Glad you could join us!

My recipe today was inspired by the unique appearance of the inside of a dragonfruit or pitaya. They’re chock full of small black edible seeds. And they remind me of what frog eggs look like.

Now, as any avid fan of Grogu from the show The Mandalorian can tell you, he can’t resist the eggs of a frog-like species he encounters. Which gave me the inspiration for this dessert.

I used the edible part of the fruit to add flavor and the visual impression of frog eggs to some gelatin. And as you can see even achieved a perfect light green color.

It’s a fun and tasty recipe perfect for April Fool’s Day. But can also be served and enjoyed anytime.

Equipment

  • 5 ramekins or serving cups

Ingredients

  • 5 ripe golden dragonfruit
  • 1 .30 ounce box sugar-free lemon gelatin dessert mix
  • 1 cup boiling water
  • 1/3 cup whipped cream

Instructions

  • Slice fruit and scoop out the white flesh and seeds.
  • Mash fruit with a fork.
  • Mix gelatin mix with boiling water and stir into fruit.
  • Pour into serving cups and refrigerate until firm, several hours or overnight.
