Spicy Bacon-Wrapped Sweet Potato Kebabs is my recipe of the day with my blogging  group Baking Bloggers. We post once monthly on the second  Monday. Our theme for this month is baked holiday appetizers.

I  decided to make spicy bacon-wrapped sweet potato kebabs, which make a nice autumn holiday appetizer for entertaining.

Browsing the internet, I had seen some sweet potato cubes wrapped in bacon (sort of like rumaki) on Taste of  Home and it sounded interesting, but I was kind of put off by the  idea of wrapping each piece of potato in bacon. I guess I  am being lazy, but I’d much rather serpentine cubes with bacon on a stick.

Besides, kebabs on sticks are always easier as an appie for parties and such.

Spicy Bacon-Wrapped Sweet Potato Kebabs

I decided to make these using frozen diced sweet potatoes. It is a shortcut to save on  time and  work when you are already busy with holiday foods. You can find them in the freezer section at the store.

Everything else is pretty easy- just don’t forget to  soak  your skewers. Do plenty,  and if you have extra, drain them and freeze in a zippy to have soaked skewers ready for next time.

Spicy Bacon-Wrapped Sweet Potato Kebabs

Equipment

  • Short wooden skewers, soaked to prevent burning
  • nonstick foil

Ingredients

  • 18 ounce package frozen sweet potato cubes thawed
  • 1/2 pound thin sliced bacon
  • 2 tablespoons melted butter
  • honey to drizzle

Spice Coating:

  • 3 tablespoons brown sugar
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions

  • Preheat oven to 400F.
  • Thread sweet potato cubes and bacon onto soaked wooden skewers, alternating in a serpentine fashion.
  • Stir together the spice mixture.
  • Brush the kebabs with butter, then sprinkle with the seasoning.
  • Place skewers onto a nonstick foil lined baking sheet and bake for twenty minutes, then turn and continue to bake for twenty minutes more.
  • Drizzle with honey and serve hot.
