Grilled Pandan Chicken Wings is my recipe of the day with bloggers sharing recipes for Herb Week. This is an annual event perfect for finding uses for your garden herbs. Glad you could join us.

It wasn’t until recent years that I could get my hands on fresh pandan leaves. I had been wanting them for a long time before that. And things like pandan essence (in a bottle) just didn’t work out in  recipes.

There is a little bit of monkeying around to tie them around the wings. So they don’t make for the greatest photos. The  wing tips did not go inside and by default are dark. But who eats wing tips anyway?

What are pandan leaves?

Pandan leaves are the long spearlike leaves from the screwpine plant. They are valued for their aroma, used in cooking.

Many times that is for desserts, but today we are using it on chicken. It imparts a grassy herbal aroma to the chicken with a light floral note. Not anything like rosewater. More like the aromas from jasmine or basmati rice.

Combined with the ingredients in the marinade, it makes for a very flavorful experience.

Equipment

  • 1 outdoor grill

Ingredients

Chicken:

  • 3.4 pounds chicken wings with wing tips
  • 12 fresh pandan leaves

Marinade:

  • 1 tablespoon grated ginger
  • 1 tablespoon minced garlic
  • 1 tablespoon lemongrass paste
  • 1 tablespoon sriracha sauce
  • 1 tablespoon dark soy sauce
  • 2 tablespoons oyster sauce
  • 2 tablespoons fish sauce
  • 2 tablespoons water
  • 1/4 cup brown sugar

Instructions

  • Marinate whole chicken wings in marinade 6 hours or overnight.
  • Drain marinade and reserve. Boil marinade 3 minutes and set aside for a baste.
  • Wrap each wing with pandan leaf, tucking the end under the rest of the leaf.
  • Grill wrapped wings 25-30 minutes or until wings probe to 165F, basting with extra marinade as they cook.
  • Unwrap wings and enjoy.
