Happy Thanksgiving! Today I am sharing my recipe for basic turkey stock with you, just in time for what to do with your bones or carcass.

Basic Turkey Stock

Yield: 14 cups stock plus 2 cups giblets/tidbits for giblet gravy
Ingredients:
- Bones from 10-12 pound turkey
- 1 turkey neck from the giblets packet (leave the other things out and cook later or save to add to dirty rice)
- 1-2 ribs celery
- 1-2 carrots
- 1/2 large onion (leave the onion skin on)
- several sprigs fresh thyme
- several sprigs fresh parsley
- 2-3 bay leaves
- 1 clove garlic
- black pepper
Method:
- Break down bones by cutting small or smashing with a meat mallet if needed.
- Place in 5 quart slow cooker and cover with water.
- Cover slow cooker and cook on low for 12 hours.
- Save any bits of meat from the turkey neck.
- Strain the rest and discard the solids.
