Pressure Cooker Tavern Sandwiches (Iowa Loosemeat)
By Sue Lau | Palatable Pastime
Today I am sharing my recipe for loosemeat sandwich meat made quickly in the instant pot.
I have previously shared a recipe that is done on the stovetop, but it takes longer and this is now my preferred method.
So if you don’t have a pressure cooker, you can still make them that way. The pressure cooker cuts way down on the time, which you do need to cook this a bit to get the right texture on the meat.
I had first tried the Loosemeat sandwiches at one of the few Maid-Rite places in Ohio (at least near me- or should I say, near enough), which is up in Greenville. We’d stopped there after finding out they had them. I had made them by someone’s recipe before that but wanted to taste the actual thing for reference. From there I could make my own preferred changes.
And their version did taste different from what I tried earlier, so I started from scratch, using my ideas and what I could see of them doing and what I thought they might be doing that I couldn’t see.
Of course, I thought they used a pressure cooker, but I didn’t have one for the recipe above, so slow simmered it.
But the instant pot makes quick work of it.
If you haven’t had one of these, it is like a sloppy joe, except not bbq- more like an old-fashioned burger. It has a tender character, like a White Castle.
Not much is added to it- onion, mustard, maybe a pickle, but no ketchup. But hey, I am not the police if you want to add that or if that’s what your kids want. I also think this would work out well served on squishy white bread instead of buns, because the buns should be pretty soft.
I am really happy to be able to make these at home now.
Not that I didn’t enjoy the drive up to Greenville. It makes for a nice day dropping in to various antique shops. Plus there was a very nice lady who grows dried flowers not too far from there that I always liked to drop by and get a box full- things like sinuata statice, dried cockscomb and sweet annie. In the late summer and early autumn those make for nice crafting and floral arranging.
Certainly works up enough appetite, that even if you did drop in to a Maid-Rite, by the time you got back home you’d be hungry again, so in about 15 minutes flat…YUM!
