My recipe of the day is for Spring Pea Guacamole, being posted in conjunction with #MLLA hosted by Renu, Lisa and Susan, to share blog recipes in a linkup for Vegetarian recipes using legumes of all kinds.

Of course,  with it being very close to Cinco  de Mayo, it is typical for me to enjoy Mexican and/or Tex-Mex foods of all kinds. I always enjoy making tons of guacamole, and as you can   see from the variety of links I have shared below, you can make it in quite a few creative ways.

Ingredients

  • 1 cup frozen peas steamed
  • 4 ounces soft goats milk cheese chevre
  • 1 teaspoon lime juice
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon garlic

Instructions

  • Puree and chill until thickened.
