Pineapple-Orange Sherbet Popsicles are easily made with a few  simple ingredients  for a refreshingly cold and frozen summer  treat.

Pineapple-Orange Sherbet Popsicles  are my recipe of the day with Summer Dessert Week. I am  doing two  recipes- this one and the blackberry dumplings I posted on Monday.

Sherbet pops  (or popsicles, if you will) are  sometimes referred to as sherbert, or sorbet (although that is usually something different).

These  pineapple-orange pops stir up with gelatin and half/half very  quickly, then poured  into the molds.

I used a silicone push-up popsicle mold  with these, although I have others which are more standard and sometimes use those. Push come to  shove and you don’t have molds, don’t be afraid to use ice cube trays or place in a tub and scoop up  like  an ice cream.

These show the push  up  molds I  use, which are pointed on the bottom. I find they work  best placed in a tumbler to fill.

You then stir up  your pineapple orange sherbet popsicle  mixture, which  is as simple as stirring  up jello. Anyone can handle it.

After you  pour in the mix, they have caps to put on.  Be sure to  leave a little headspace because frozen stuff expands. And  while the  caps seem  snug enough, I wouldn’t want it spilling all  over the freezer (and don’t want to freeze my  acrylic  tumblers either) so I propped them  up in  one of those  freezer jam  boxes. I think  you  can freeze  those rubbermaid/tupperware squares as well.

Of course once they   are frozen you can  store them in a gallon  freezer ziploc to help keep  freezer odors out.

These are fantastic for the kids and grandkids and maybe some of of the old-timers too. My mother would have loved these, especially today, which was her birthday.

Ingredients

  • 20 ounce can pineapple chunks in juice
  • 6 ounces boiling water
  • 3- ounce package orange gelatin I used sugar-free
  • 1 cup half and half

Instructions

  • Dissolve gelatin in boiling water.
  • Puree gelatin with pineapples (and juice from can and half and half).
  • Pour into popsicle molds and freeze until firm.

Notes

Makes 4 cups sherbet mix.
