Bacon and Onion Skillet Potatoes is my recipe of the day. Perfect for breakfast or as a side at dinner,  they are home cooking at its best.

These are also known  to me  as Cottage Fries, I believe due to them being sliced. Although I think that title  is pretty much out of use.

As I was growing up, these were the  first kind of potatoes I learned how to  cook. They were a favorite of my  mother, and she cooked them  often,  but usually only plain  with basic seasoning.

I  am someone who loved bacon,  so you know this  will  be popular  with me.  And adding onion really does fill  out the flavor. I do use the garlic powder purposefully. It keeps having  minced garlic overcook  and become bitter or  burn.

Bacon and Onion Skillet Potatoes

Ingredients

  • 6 slices bacon
  • 2 pounds russet potatoes (peeled and thinly sliced)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 cup minced onion

Instructions

  • Cook bacon until crisp; set aside and reserve bacon grease.
  • Chop bacon into crumbles.
  • Add sliced potatoes to the pan, seasoning between layers.
  • Cook over med-low heat, carefully turning every few minutes and separating clumps of potatoes.
  • When potatoes start to show some light browning, add the onions and bacon crumbles and continue to cook, turning carefully, until potatoes are nicely browned throughout.
