Hash Brown Waffles

Hash Brown Waffles is my recipe of the day with the blogging group Sunday Funday. We blog on Sundays on various food topics, sharing our best recipes for those.
Waffles is the topic for this week. I decided to share my fun recipe for making hash browns in the waffle iron. They make such cute waffle shapes. And very crisp.
I like using the waffle iron to make creative recipes. It’s as easy as tossing together a few simple ingredients to help get breakfast on the way.
If your stove is overrun with other foods, this is the perfect way to free up valuable space.
You won’t really save on cooking time, as these take about as long as if you had cooked them on the stove. But the plus side is how they crisp and keep that classic waffle shape!
I served mine with eggs over easy and sausages. I typically enjoy breaking a runny egg yolk and mixing with hash browns. In this case, they were crisp squares so I just picked it up and dunked it into the yolk. We don’t stand on protocol with fingers at the breakfast table.
It is de rigueur for eating bacon! So have some fun next time you take your waffle iron out of the cabinet.

Hash Brown Waffles

Hash Brown Waffles
Equipment
- Electric waffle iron (4 squares)
Ingredients
- 20 ounce bag Simply Potatoes refrigerated hash browns
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 large eggs
- 6 tablespoons flour
- 2 teaspoons vegetable oil
Instructions
- Spray a large four square waffle iron with nonstick spray or brush lightly with oil.
- Toss ingredients for hash brown waffles together in a mixing bowl.
- Place half a cup of the potato mixture onto each square, spreading it out to fill the gaps.
- When all squares are filled, close the lid and continue to cook for about 25 minutes or until it pretty much stops steaming.
- Remove waffles from the waffle iron. They should be browned and crisp.
- Keep the cooked ones warm in a low oven if you have multiple batches to make. You can easily halve this recipe and make about 3.5 waffles that way if the full order is too large.
- Serve crispy potato waffles with other breakfast foods.

I did a similar thing with the mixture I use to make falafels and was super pleased with the crispiness. Great idea to make hash brown waffles, Sue!
That looks like a perfect meal to me. I’ll have to get it on our menu, we do breakfast for dinner about once a week and this will be a fun addition
