Low-Carb Oatmeal Raisin  Cookies are my recipe of the day for National  Oatmeal Month.

It is National Everybody is Trying to Diet month as well, but I digress. Did you make a resolution  to eat healthier? One of the ways to do that is to nix some of the carbs you might ordinarily eat.

And to that end I am sharing my concoction for low-carb oatmeal raisin cookies. Because you can put a girl on a diet, but she’s still gotta’ eat,  right?

So I  tinkered  with  ingredients until I got  some that  work. And while low-carb is subjective as far as nutritional terms go, I  have posted the nutritionals below the recipe to see if it suits you.  Sorry that the edge of that graphic clipped.  I copied it from the website where I calculated the ingredients.  And  the image  just looks that way on  their end.

Ingredients
  

  • 1 egg
  • 1/2 cup butter (at room temperature)
  • 1/2 cup gluten free oats
  • 1/2 cup almond meal
  • 1 scoop Bob's Red Mill vanilla protein powder
  • 2 tablespoons flax seed
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 tablespoons sugar-free Cinnamon flavored coffee syrup
  • 1/4 cup raisins
  • 1/4 cup unsweetened coconut
  • 1/4 cup stevia in the raw
  • pinch nutmeg
  • 1/4 teaspoon cinnamon

Instructions
 

  • Preheat oven to 375F.
  • Mix together ingredients and drop dough onto a parchment lined cookie sheet by heaping tablespoonful (makes 24).
  • Bake 12-15 minutes.
  • Cool on pan then store in an airtight container.

  1. Wow, these low carb oatmeal raisin cookies look really delicious! Sometimes I go on a low-carb diet for a couple of weeks and it helps me just to lose a few pounds.   3. Absolutely amazing flavor.
    However, I had to make my cookies into crumbs. They did not keep there form. Fell apart when we tried to pick them up….I ended up adding two eggs to the remainder of the dough and made it into a delicious cake.
