Southern Style Green Beans (Instant Pot)  is my recipe of the  day with my blogging group Multicooker Monday.  We gang up on you with our favorite recipes for small appliances  on the third Monday of the month.

Some of the recipes will be for the Instant Pot, some for the slow cooker, air fryer,   toaster oven,  sous vide, you name it.

I am expanding my pressure cooker recipes with this one for green beans. It is in  the typical  southern style.  Which means it is very tender  and not crisp at all.  The idea  is to have them  in a jus, or pot likker, which  is good for dunking bread or serving  next to corn bread.

The seasoning is for jowl bacon or any type  of  fatty bacon.  The fat  helps season  and adds flavor.

Equipment

  • Instant Pot or Electric Pressure Cooker

Ingredients
  

  • 1 pound fresh green beans trimmed
  • 3-1/2 ounces diced jowl bacon or fatty bacon
  • 1 tablespoon butter
  • 1 medium red onion (chopped)
  • 3 cloves chopped garlic
  • 1-1/2 cups chicken broth
  • 1 tablespoon Cajun spice mix
  • 1/2 teaspoon black pepper
  • hot sauce (optional; after cooking)

Instructions
 

  • Set machine to saute function and brown the bacon, onion and garlic in the tablespoon of butter.
  • Add the chicken broth and spices, stirring to deglaze the bottom of cooker.
  • Add trimmed green beans.
  • Place cover on cooker and lock, setting valve closed.
  • Cook on manual/high for seven minutes.
  • Use the quick release and open lid only after steam has subsided completely.
  • Season with hot sauce to taste.

  1. I don’t normally think of using the instant pot for veggies but for a dish like this that normally needs to cook slowly and takes time, the instant pot is perfect.
