Green Beans with Poblano Peppers is my recipe of the day with Farmer’s Market Week. I’ve been sharing recipes all week long and will continue through tomorrow. And hopefully a few others on empty days if I don’t go awol.
These braised green beans are typical of something I might make with a homestyle supper. Being very much like southern braised green beans which I do in many ways.
This has country bacon in it because…it was in the fridge. Country bacon is typical in Amish country, along with the also-salty country ham. It makes great seasoning. If you are going to have it for breakfast it probably likes a soak since it is salt cured, but it is fine for something that needs salt anyway, like veggies.
Poblanos are wonderful as peppers. A bit spicier than bell peppers and with better flavor.
The beans braise for a bit to be tender so don’t expect a crispier bean- these are truly southern style. They are soft like veggies in a stew would be soft. Lots of pot juice there too–bake up some cornbread to soak it up. Not just a southern thing. My MIL would never have dreamt of wasting veggie broth and she lived lifelong in the great white north of Wisconsin.
And pardon my spoon- it’s my favorite and has seen many days in the bottom of a fiery wok. At least it has never caught on fire, but like a cookbook splattered with food love spots, the wood here shows my love for it. I did buy some new ones but nah. The wood doesn’t feel the same.

Green Beans with Poblano Peppers
Ingredients
- 2.5 ounces cubed country bacon or salt pork
- 12 ounces fresh green beans trimmed
- 1 cup chopped Vidalia onion
- 1 fresh poblano pepper seeded and diced
- 2 tablespoons chopped garlic
- 2 cups chicken broth or vegetable broth
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon ground cumin
Instructions
- Brown country bacon with onions in a nonstick skillet; add garlic for 30 seconds, then remaining ingredients.
- Simmer 30 minutes, covered.
