Salt and Vinegar Skillet Potatoes is my recipe of the day. Once again it is time for the blogging group Foodie Extravaganza.
We join up monthly and post recipes for various food holidays. This month is National Potatoes Month. So the game is afoot for posting lots of potato filled recipes.
For my choice I am sharing Salt and Vinegar Skillet Potatoes. Which is a type of hash brown that is chock full of salty vinegar flavor. That is also a fav chip flavor of mine. It really brightens up this potato side.
I find this type of potato is not only wonderful for breakfast. But it is also perfect as a side for fish. And burgers. And I could go on and on.
Par cooking the potatoes in a vinegary water cooks that flavor right in. Plus, the half cooked potatoes can easy be saved for later for a quick finish on busy nights. Not to mention that the time to finish is much less than normal potatoes.

Salt and Vinegar Skillet Potatoes
Ingredients
- 2 pounds russet potatoes (peeled and diced)
- 1 cup apple cider vinegar
- 1 cup water
- 1 tablespoon salt
- 2 tablespoons vegetable oil
Instructions
- Place potatoes in a saucepan with water, vinegar and salt.
- Bring to a boil and simmer ten minutes, then drain.
- Place drained potatoes in a skillet with oil cook for ten minutes more, turning occasionally, until browned and crisp. Add additional seasoning if desired.

Love the idea of cooking the potatoes in vinegar. I would love to try it with a few Thai chilies sauteed together.
