Crispy Catfish Nuggets is my recipe of the day for the blogging group Fish Friday Foodies. We post monthly on the third Friday our favorite seafood recipes on a common topic. Each month one of the members does the hosting and gets to select the topic. This month, Stacy of Food Lust People Love is our host, and thought we should share our favorite battered and crusted seafood recipes.

These crispy catfish nuggets are first placed in a spicy marinade overnight to infuse them with flavor. Then they are dipped into a coating and quickly fried for a delectable crust.

You can use any type of fish in this, although I’ve used nuggets in the photos. Children generally like nuggets, though my favorite is often the catfish filets. You can do shrimp in this, but I prefer to do my shrimp in a batter or breadcrumb coating.

Ingredients

Fish:

  • 1 pound catfish nuggets

Marinade:

  • 1/4 cup Louisiana hot pepper sauce
  • 2 teaspoons Worcestershire sauce
  • 1/4 cup tomato ketchup
  • 1 tablespoon balsamic vinegar

Coating:

  • 1-1/2 cups all-purpose flour
  • 2 tablespoons black pepper
  • 2 tablespoons salt
  • 1 teaspoon garlic powder

Instructions

  • Marinate nuggets for 6 hours or overnight.
  • Mix coating and dredge catfish, lightly tapping off excess.
  • Rest catfish on a plate and heat frying oil several inches deep in a skillet, but no more than halfway in the skillet.
  • Dredge catfish nuggets again.
  • When oil is hot but not smoking, fry catfish for 4-6 minutes or until crispy and browned.
  • Drain on paper toweling or a paper bag.
