Air-Fryer Honey Roasted Parsnips is my recipe of the day with the blogging group Sunday Funday. We post weekly on varying topics. This week we’re featuring fresh vegetables. Glad you could join us!

We love fresh vegetables here. It’s one of our favorite things about summertime – stopping at local farmer’s market for local produce. And we love all manner of vegetables, especially some of the less common (these days, at least) ones.

So for today’s post I chose my recipe for roasted parsnips.

Parsnips, if you’re not familiar, are root vegetables in the same family as carrots. They have a wonderful, slightly sweet flavor that roasting brings out nicely. These are simply seasoned and make a delicious side dish you can serve with a wide array of main dishes. Hope you enjoy!

Equipment

  • 1 Air Fryer

Ingredients

  • 1 lb parsnips peeled and cut into sticks
  • 2 teaspoons of extra virgin olive oil
  • 3 tablespoons honey
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1/2 teaspoon chili powder

Instructions

  • Toss parsnips with oil, 2 tablespoons honey, salt, and black pepper.
  • Cook Parsnip sticks in the basket lined with parchment paper at 400 f for 15 minutes turning every 5 minutes.
  • When done sprinkle with remaining honey and chili powder before serving.
