Cheddar Baked Zucchini with BBQ Sauce is my recipe  of the day.

This is a simple prep I did on  some zucchini from the garden and  wanted them done quickly and easily without the  usual pan saute.

Select smaller  zucchini without seeds for the best  results, then slice and bake the rounds with some  cheese on top .  The  little bit of  drizzle with the bbq sauce adds a touch of smoky  flavor without  being wonky.

This is one of  the last  of  the summer recipes I have  for you this year as the season draws  to a close. I  will be posting a recipe for fresh peach iced tea on  Tuesday while I gang  up  with a few  blogging friends to celebrate the last of  our peach recipe  stash.

They are my favorite  fruit. I still have some tomatoes and peppers going on although my zukes are winding  down. But I  will be out of  blogging  time. They will  have  to wait until next season.

I also have  the most gorgeous little  round  eggplants of an unusual variety.  Those will  likely end  up  in curry as it seems time for a good  Thai curry with veggies.

Then there are the herbs  which I will be  drying  up. Some people ask me why I use things like dried thyme. It’s because I grow  it. Doesn’t  mean I won’t use it  fresh when  it’s available.

Some things  like oregano, are actually better  dried.  But basil is one of those you do not necessarily want to dry and especially cilantro.

Cheddar Baked Zucchini with BBQ Sauce

Ingredients

  • 2 medium zucchini sliced (about 1-1/4 pounds)
  • extra virgin olive oil
  • salt and black pepper
  • garlic powder
  • barbecue sauce

Instructions

  • Preheat oven to 400F
  • Slice zucchini into rounds and place on a nonstick foil lined baking sheet.
  • Drizzle with olive oil and season with salt, pepper and garlic powder.
  • Sprinkle the tops with cheddar.
  • Bake for 15-25 minutes or until zucchini is fork tender.
  • Place under broiler to brown cheese a little bit, if desired.
  • Drizzle with barbecue sauce before serving.
