Zucchini with Cheese Flatbread is my recipe of the day with the blogging  group Foodie Extravaganza. We post monthly on food holidays. This month we’re all sharing zucchini recipes. Glad you could join us!

Zucchini with Cheese Flatbread

My offering is for a flatbread pizza which is made with a refrigerated, rectangular pizza crust.

First you roll out the crust on an oblong pan. Next, brush it with a creamy garlic-parmesan sauce. You make the sauce by mixing mayo with seasonings. Hard to argue with that simplicity!

Then sprinkle on three types of cheeses and grated zucchini. After which you bake it until browned and bubby, then cut into squares. Easy peasy!

By all mean make several and have a movie night pizza party!

This went over well and was gobbled up in no time here. It’s a really tasty way to serve up some of summer’s garden bounty. I do hope you enjoy!

Ingredients
  

  • 14 ounces refrigerated pizza dough rectangular shaped
  • 3 tablespoons mayonnaise
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 ounces shredded mozzarella cheese
  • 4 ounces shredded provolone cheese
  • 1/4 cup shredded parmesan cheese
  • 1 cup shredded zucchini

Instructions
 

  • Preheat oven to 400F.
  • Press pizza dough into a 9x13-inch baking pan.
  • Brush evenly with mayonnaise them sprinkle with remaining ingredients.
  • Bake for 18-20 minutes.
  • Cut into six squares.
