Ingredients
  

  • 3 cups cold cooked rice (crumbled)
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 2-1/2 cups chopped fresh mushrooms
  • 2 tablespoons onion soup seasoning/mix
  • 2 tablespoons chopped Italian parsley

Instructions
 

  • Heat the oil and butter in a large skillet.
  • Add mushrooms and saute until soft.
  • Stir in the cold cooked rice, dry soup mix and parsley; heat until warmed through, lightly browned if desired.

  1. Great way to use leftover rice. I easily cut recipe in half for 2 servings and since I didn’t have onion soup mix on hand I used beef bouillon powder and dried onion flakes. Served with meatloaf and green beans. Thus is a keeper on Imthink it would work with chicken bouillon also.
