Chocolate Chip Cookies (CCC) is my recipe of the day for the last day of Choctoberfest. Which includes a giveaway for a KitchenAid mixer over and above all the delicious recipes.
You’ve probably seen a lot of chocolate chip cookies and their variations and no doubt have a recipe you already like to use. This recipe is just my personal tweaks on the classic Toll House, the way I like to do them. Little variations that I think improve the flavor overall, without getting too creatively wonky.
Sometimes you just want the basic version of something.
So I use some coffee flavoring and dark chocolate as well and that’s what I like. There are some nuts in there as well but you can always ditch those in favor of even more chocolate. Perhaps a butterscotch chip?

Chocolate Chip Cookies
Ingredients
- 1 cup soft unsalted butter
- 3/4 cup brown sugar
- 3/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 teaspoon coffee extract
- 2 large eggs
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2-1/4 cups all-purpose flour
- 12 ounces semi-sweet chocolate chips
- 1 cup dark chocolate chips
- 1 cup chopped nuts (walnuts or pecans)
Instructions
- Preheat oven to 375F.
- Cream butter with sugars, then add eggs and extracts.
- Mix in the baking soda, salt and flour.
- Fold in chips and nuts.
- Drop dough using a one tablespoon cookie scoop onto parchment lined baking sheets.
- Bake for 9-11 minutes.
