Blackberry Pistachio Crunch Sundae is my recipe of the day with the blogging  group  Sunday Funday. We are sharing  ice cream related recipes today. This is  in celebration of  National Ice Cream Day.

I decided to make a riff off something I had at a gelato stand recently. Theirs had sort of a blackberry swirl in the  gelato with  a bit of baklava  and pistachio crunch. We loved it. But here’s mine:

And of course here is a pic of the one  from Dojo  Gelato in Cincinnati. I think  it  would be good either way with a blackberry  sauce or fresh berries.

I used caramel as well so sauce wasn’t needed.

But anyhoo- it goes to show not every special dessert needs  to be made with ice cream from scratch. Sometimes it’s the add-ins that make it the star of the show.

Blackberry Pistachio Crunch Sundae

Equipment

  • Freezer

Ingredients

  • 1 pint vanilla ice cream
  • 1/3 cup chopped roasted pistachios
  • 1-1/4 cups chopped baklava
  • 6 ounces fresh blackberries
  • 1/3 cup caramel ice cream topping or sauce
  • whipped cream as needed

Instructions

  • Soften ice cream enough to be able to mix in the stir-ins.
  • Gently fold in 1/4 cup pistachios, 1 cup of the baklava, and 5 ounces of blackberries, reserving the remainder of each to top the ice cream later.
  • Put the ice cream back into the freezer until it firms up a bit.
  • Scoop loaded ice cream into bowls and top with caramel sauce, remainder of pistachios and baklava.
  • Top with whipped cream and the extra blackberries.
  • Serve at once.
