Summer Gazpacho is my recipe of the day for the blogging event Farmer’s Market Week. We do an event annually during the summer to share our love and excitement for locally sourced produce. Glad you could join us!

I’ve mentioned before how we love our local farmers’ markets. Around here, most open in May. From that point pretty much until almost Thanksgiving we enjoy as much local produce as we can.

We’re fortunate to live in an area with many seasonal and a even a couple of year-round markets. As well, some communities host monthly public markets. Hopefully you have have access to some local or area markets where you live.

My recipe today is for a Spanish gazpacho, or cold vegetable soup. It includes fresh tomatoes, green pepper and cucumber, preferably from your local farmers’ market! Fresh produce does make a difference.

I’ve made a Spicy Gazpacho before, which doesn’t include the bread crumbs like this recipe. It also differs in some of the other ingredients. I think both versions are delicious!

Equipment

  • Blender

Ingredients

  • 2 ounces soft French bread crumbs
  • 1 cup warm water
  • 2 pounds ripe tomatoes
  • 1 green bell pepper
  • 1 English cucumber
  • 3 ounces red onion
  • 2 teaspoons ground cumin
  • 1 teaspoon garlic
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons red wine vinegar

Instructions

  • Tear up bread into smallish pieces and place in blender and top with warm water.
  • Allow to sit a few minutes then add remaining ingredients to blender; puree until smooth.
  • Chill before serving. Overnight is best.
