Blackberry Cornmeal Cobbler is my recipe of the day for the blogging event Farmer’s Market Week. On Monday, Wednesday and Friday I will be sharing some fun and delicious recipes along with a few of my blogging friends.

Blackberries are one of my favorite berries, alongside black raspberries. So they are a natural choice for making desserts. Cobblers and crisps are quite easy to make. And this one with cornbread crumbs is another delicious variation. It has a light crunch that is just perfect and the amount of sweet is also just right.

Blackberry Cornmeal Cobbler
Equipment
- 1 9x13-inch stoneware baking pan
Ingredients
Berry Mix:
- 2 pounds fresh blackberries 6 half pints
- 1/2 cup granulated sugar
- 3 tablespoons cornstarch
- 1/4 teaspoon cinnamon
Cornmeal Crumb Topping:
- 3/4 cup yellow cornmeal
- 1/2 cup all-purpose flour
- 1/4 cup granulated sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 6 tablespoons soft butter
- 1/4 cup buttermilk
Instructions
- Preheat oven to 400F.
- Butter an oblong baking dish (13x9 or a lasagna pan).
- Toss blackberries with sugar, cornstarch, and cinnamon. Place in the baking pan.
- Mix the cornmeal, flour, sugar, baking powder, and salt with soft butter, then mix in buttermilk.
- Drop by spoonfuls over berries as evenly as you can.
- Bake for 30 minutes or until nicely browned.
- Serve with ice cream or cool whip.
