I don’t  always make a candies yam type dish for the holidays. But with this one I really like the flavor the apple cider adds over and above something like  pineapple juice. Marshmallows are really optional  with this recipe  if you don’t like your yams cloyingly sweet. You can even divide the pan  half  and half. You decide.

Baby Yams with Honey Apple Syrup

Ingredients

  • 1-1/2 pounds fresh baby yams or sweet potatoes
  • 1/2 cup apple cider
  • 1/2 cup honey
  • 1 tablespoon lemon juice
  • 1 tablespoon butter
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon ground ginger
  • 1/2 cup miniature marshmallows (optional)

Instructions

  • Preheat oven to 375F.
  • Prick potatoes with a fork, small knife or icepick and place on foil in a baking pan.
  • Roast potatoes for 60 minutes or until fork-tender.
  • While yams are roasting, place cider, honey, lemon juice, butter, vanilla and ginger in a saucepan, whisking to blend.
  • Simmer syrup over low heat until reduced to half the original quantity (you should end with about half cup and it should be syrupy).
  • Peel yams and place in a small baking dish.
  • Pour syrup over yams and bake ten minutes more.
  • Then sprinkle with marshmallows if you like those and place under the broiler until toasted and lightly browned.
