Instant Pot Sweet Potatoes is my recipe of the day with the From Our Dinner Table blogging group. Each week the topic changes and bloggers will post their freshest tastiest recipes for those.
This week it’s all about potatoes.
I am always digging having roasted sweet potatoes, especially with a bbq. That generally takes me 20-30 minutes to heat the oven plus another 75 to roast. But. With the Instant Pot I can get that one out the door in half the time. All without heating up my kitchen
It’s still hot here. And my hat is off to California with all the heat there. Yeesh.
This recipe will work for however many sweets you can comfortably fit in your cooker. I will generally cook a few extra because they reheat well. Plus I can put the mash into something like biscuits or bread. Diced sweets even make a fantastic salad topping. There are so many things you can do.

Instant Pot Sweet Potatoes
Equipment
- Electric Pressure Cooker (Instant Pot)
Ingredients
- 4-6 Sweet potatoes
Instructions
- Prick sweet potatoes a few times with a small knife or ice pick.
- Put one cup water in the bottom of the cooker.
- Place sweet potatoes in the cooking basket in the cooker.
- Put the lid on, lock with vent closed to seal.
- Cook at manual/high for 20 minutes.
- Let cool down naturally (about 15 minutes).

I have never cooked potatoes in a pressure cooker. Shocking I know! I have family that live in upper elevations and it is the only way they can cook them, but I’ve never thought about it. Until now! 😉
I need to cook some yams for Fall week. I’m definitely trying those in my pressure cooker.
