Slow Cooker Vegetable Beef Soup is my recipe  of the day with the blogging group Multicooker  Monday. This is our last posting of the year and also as MM as well. Today I am sharing one  of my fav soup  recipes which has beef and mixed vegetables. It uses chuck steak which is a thinner slice of  chuck roast. I chop it up so the  pieces  will  be bite  sized  in the soup.

Besides chuck steak, you can also substitute browned extra lean ground beef if  it is  what you have on hand. If you like larger chunks of beef, you could also try using stew beef. Whichever you prefer.

Equipment

  • Crock Pot or Slow Cooker

Ingredients

  • 2 pounds beef chuck steak (diced)
  • 1 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 3 tablespoons oil
  • salt and black pepper (to taste)
  • 1/4 cup all-purpose flour
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon dried thyme
  • 12 ounces frozen mixed vegetables
  • 15 ounce can diced tomatoes (with liquid)
  • 15 ounce can crushed tomatoes
  • 1-1/2 pounds peeled and diced potatoes
  • 4 cups beef stock
  • salt and black pepper (to taste)
  • 2 bay leaves

Instructions

  • Brown steak, onions, and garlic in oil with salt and black pepper.
  • Stir in flour and mix to coat the meat.
  • Please the meat and all remaining ingredients in the crock and stir.
  • Cover and cook on the low setting for 8 hours.
