Best Peanut  Butter Blondies

Usually blondies differ from brownies and  other bar cookies in that they don’t have chocolate and have a slight butterscotch flavor.

These take  on strong flavors of peanut butter, but still have the butterscotch notes from using the Lyle’s golden syrup and brown sugar.

These blondies have a nice chewy texture and are a touch softer than peanut butter bars. Chewy. Like brownies. Everyone  loved them here.

Ingredients

  • 3 large eggs (at room temperature)
  • 1/2 cup cooled melted butter
  • 1/2 cup creamy peanut butter
  • 1/2 cup Lyle's golden syrup
  • 1-3/4 cups light brown sugar
  • 1 teaspoon salt
  • 3/4 teaspoon baking powder
  • 1 tablespoon vanilla powder
  • 2-1/2 cups all-purpose flour
  • 1/2 cup Reese's baking chips
  • 1 cup chopped roasted salted peanuts

Instructions

  • Preheat oven to 350F.
  • Line a 9x13-inch baking pan with parchment paper, overhanging and lightly greased so it clings to the pan while you add the batter (I use a little bit of nonstick spray).
  • Mix together the eggs, melted butter, peanut butter and golden syrup until smooth.
  • Add the brown sugar, salt, baking powder, vanilla powder and flour, mixing well.
  • Fold in the peanut butter chips and peanuts.
  • Spread evenly in the pan.
  • Bake for 30-35 minutes or until just barely underdone, then remove from oven.
  • Let cool in the pan, then lift out using the paper overhang and cut into two dozen blondies (4x6)
