Best Peanut Butter Blondies
Usually blondies differ from brownies and other bar cookies in that they don’t have chocolate and have a slight butterscotch flavor.
These take on strong flavors of peanut butter, but still have the butterscotch notes from using the Lyle’s golden syrup and brown sugar.
These blondies have a nice chewy texture and are a touch softer than peanut butter bars. Chewy. Like brownies. Everyone loved them here.

Best Peanut Butter Blondies
Ingredients
- 3 large eggs (at room temperature)
- 1/2 cup cooled melted butter
- 1/2 cup creamy peanut butter
- 1/2 cup Lyle's golden syrup
- 1-3/4 cups light brown sugar
- 1 teaspoon salt
- 3/4 teaspoon baking powder
- 1 tablespoon vanilla powder
- 2-1/2 cups all-purpose flour
- 1/2 cup Reese's baking chips
- 1 cup chopped roasted salted peanuts
Instructions
- Preheat oven to 350F.
- Line a 9x13-inch baking pan with parchment paper, overhanging and lightly greased so it clings to the pan while you add the batter (I use a little bit of nonstick spray).
- Mix together the eggs, melted butter, peanut butter and golden syrup until smooth.
- Add the brown sugar, salt, baking powder, vanilla powder and flour, mixing well.
- Fold in the peanut butter chips and peanuts.
- Spread evenly in the pan.
- Bake for 30-35 minutes or until just barely underdone, then remove from oven.
- Let cool in the pan, then lift out using the paper overhang and cut into two dozen blondies (4x6)
