Cherry and Peanut Butter Winks is  my recipe of the day.  It  is the last cookie recipe  I will be making this season. And I thought I might squeeze them into the  schedule in case you were still hunting  for recipes. I always have a few holiday recipes coming  down  to the wire and the crunch time becomes  decision time as to what to share with you.

I wanted to have a few more cookies on hand for the holiday and have not done anything  peanut butter in  awhile. Plus my husband loves thumbprints. So these are a  hit.

The hit  part  for me  is that it moves out the last of my candied  glace cherries. And a  little bit of jam. I have another recipe for a jam tart tomorrow that cleared some of that out.  Don’t you  love using  up your end of season bits? Plus,  it means one less thing to buy. My jaw is still dropping at the high grocery prices.

Ingredients
  

  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup creamy peanut butter
  • 1/2 cup butter (at room temperature)
  • 1 egg
  • 1 teaspoon vanilla
  • 1 1/2 cups all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • Additional granulated sugar
  • 28 red glace cherries
  • 3 tablespoons cherry jelly

Instructions
 

  • Heat oven to 375°F.
  • Cream together the granulated sugar, brown sugar, peanut butter and butter in a mixing bowl.
  • Stir in egg and vanilla.
  • Add flour, baking soda and baking powder and mix into a stiff dough.
  • Use a tablespoon size cookie scoop to measure dough; shape into balls and roll in granulated sugar.
  • Place on a parchment lined cookie sheet and flatten somewhat.
  • Bake for 4 minutes.
  • Make an indentation with a wooden spoon into the center of each cookie (don't press all the way down).
  • Fill the hole with 1/4 teaspoon cherry jelly and top with a glace cherry.
  • Return cookies to oven and bake ten minutes more.
