Peanut Butter Banana Muffins is my recipe of the day with the blogging group Muffin Monday. We post monthly on the last Monday with our most delicious muffin recipes ever.
An unusual twist on banana nut muffins, these baked treats are popping with peanuts, dried banana chips and of course, the obligatory peanut butter.

Peanut Butter Banana Muffins in Foil Baking Cups
Bursting with old-fashioned goodness, these peanut butter banana muffins easily become hand-held treats inside baking cups. You can opt to bake these either way, with or without the foil wrappers.

Peanut Butter Banana Muffins
Equipment
- 16 foil baking cups or use Baker's Release spray
- 1 large muffin tin
Ingredients
Muffin Ingredients:
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup granulated sugar
- 1/4 cup chopped dry roasted peanuts
- 1 cup mashed ripe banana
- 1/3 cup creamy peanut butter
- 6 tablespoons melted butter cooled to room temperature
- 1 teaspoon vanilla extract
- 2 large eggs lightly beaten
Crumb Topping ingredients:
- 1/4 cup chopped dry roasted peanuts
- 1/4 cup chopped dried sweetened banana chips
- 1/4 cup light brown sugar
- 1/4 cup all-purpose flour
- 2 tablespoons old-fashioned oats
- 1/4 teaspoon cinnamon
- 3 tablespoons melted butter cooled to room temperature
Instructions
- Preheat oven to 350° F.
- Sift together in a mixing bowl the all purpose flour, baking powder, baking soda, and salt.
- Stir in the granulated sugar and chopped peanuts.
- Beat eggs lightly with a fork in another small mixing bowl.
- Stir in the banana, peanut butter, melted butter, and vanilla.
- Place baking cups in the cavity of a muffin pan or spray with Baker's Release spray.
- Fill baking cups about 2/3 full with batter (about ¼ cup.)
- Mix together the ingredients for the streusel In another small bowl, until crumbly but well combined.
- Divide streusel by sprinkling evenly over batter.
- Bake muffins in the preheated 350° F. oven for about 20 minutes or until you can insert a toothpick into a muffin and remove it without wet batter sticking to it.
- Cool 5 minutes in the muffin pan, then gently turn out muffins and finish cooling on a wire rack.
Notes
Do not overfill baking cups. If you overfill, the batter with not create a domed top on the muffin but will spill over the sides of the pan and spread excessively as well as set off the baking time.

What a great idea to add extra peanuts and banana chips to the tops! I would love the extra crunch!
This will be a good muffin to substitute for my normal peanut butter banana toast in the morning.
I love the addition of the banana chips and peanuts to the topping. Banana chips are a beloved snack here in Jamaica but we only get the salted, never sweet. I can’t wait to use them in a sweet preparation.
The banana chips I use do taste sweet overall. I’m not sure if they use honey or sugar in the prep. They taste a bit different from say, plantain chips.
Love a crumble topping! I buy maple syrup sweetened PB that will be awesome in these!
