Irish Soda Farls is my recipe of the day with the blogging group Bread Bakers. This month we are sharing recipes for Irish breads ahead of St. Patrick’s Day.

What are Farls?

Farls are a type of quick bread made on a griddle or in a skillet. They are patted out almost like scones, then cooked like pancakes, except using stiff dough instead of a runny batter.

They are so called after the word “fardels”, meaning “fourths”, since the dough is cut into quarters.

There are a couple of types of farls I know of, which are the soda farls in this recipe and also potato farls. This recipe is more like a strict soda bread dough. The potato farls include potato in the dough as you might surmise. I have a recipe for those included on my Ulster Fry recipe, which is a multi-part breakfast.

I imagine these are mostly served at breakfast, but I can also well imagine them being used to sandwich meats in a lunch pail.

Ingredients

  • 8 ounces all-purpose flour (about 1-1/2 cups)
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup whole buttermilk

Instructions

  • Stir together the flour, baking soda and salt.
  • Gradually mix the buttermilk into the flour.
  • Knead gently for a few minutes on a lightly floured surface, then pat into a disk 1/2" thick.
  • Cut dough into quarters with a floured bread knife.
  • Lightly oil a griddle or skillet as you would if you were making pancakes.
  • Add dough pieces to pan and cook about 5-7 minutes each side or until golden.
